Instructions
Heat olive oil and sauté chopped vegetables with salt until soft, about 6-8 minutes.
Add garlic and thyme; cook 1 minute, then stir in tomatoes and cook 2 minutes.
Mix in quinoa, broth, bay leaves, and red pepper flakes; bring to boil, then simmer 25 minutes.
Add beans and kale; cook 5 minutes, remove bay leaves, stir in lemon juice, and season to taste.
Ladle into bowls, garnish with herbs if desired, and serve hot.
