A hearty and nutritious quinoa soup packed with vegetables and beans, perfect for a comforting meal.

Ingredients

olive oil

  • 2 tablespoons olive oil

vegetables

  • 1 large onion (chopped)
  • 3 carrots carrots (peeled and chopped)
  • 3 celery ribs celery (chopped)

garlic

  • 5 cloves garlic cloves (minced)

spices

  • 1/2 teaspoon dried thyme

canned tomatoes

  • 1 can diced tomatoes (28 ounces)

quinoa

  • 1 cup quinoa (rinsed)

broth

  • 6 cups vegetable broth (low-sodium)
  • 2 bay leaves bay leaves
  • 1/4 teaspoon red pepper flakes (optional)

white beans

  • 1 can white beans (15 ounces, drained)

greens

  • 1 1/2 cups chopped kale

lemon juice

  • 2 teaspoons lemon juice

seasoning

  • to taste salt and pepper

garnish

  • optional fresh herbs (chopped, for garnish)

Instructions 

  • Heat olive oil and sauté chopped vegetables with salt until soft, about 6-8 minutes.
  • Add garlic and thyme; cook 1 minute, then stir in tomatoes and cook 2 minutes.
  • Mix in quinoa, broth, bay leaves, and red pepper flakes; bring to boil, then simmer 25 minutes.
  • Add beans and kale; cook 5 minutes, remove bay leaves, stir in lemon juice, and season to taste.
  • Ladle into bowls, garnish with herbs if desired, and serve hot.
