A vibrant and nutritious quinoa salad packed with fresh vegetables, herbs, and a tangy dressing, perfect for a healthy meal or side dish.

Ingredients

  • 1 cup cooked quinoa
  • 2 pieces Persian/Lebanese cucumbers
  • 2 pieces roma tomatoes
  • 0.5 small red onion (Optional soak in water for 10 mins)
  • 0.5 large avocado
  • 10 pieces kalamata olives
  • 1 handful fresh mint leaves
  • 0.5 lemon lemon (Juice of half a lemon)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • to taste Salt and black pepper

Instructions 

  • Cook the quinoa and let it cool.
  • Dice cucumbers, tomatoes, red onion, and avocado; chop olives and mint leaves.
  • Combine all ingredients in a large bowl and add lemon juice.
  • Whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  • Pour dressing over the salad, toss gently, and serve.

Notes

For extra flavor, let the salad sit for 10 minutes before serving.
