A quick and healthy stir-fry combining lean ground turkey and fresh zucchini, perfect for a nutritious weeknight dinner.

lean ground turkey
Vegetables

medium zucchinis
zucchinis, sliced into half-moons
Oils & Condiments

olive oil or neutral oil like avocado oil

garlic, minced

fresh ginger, grated
(or pinch of ground ginger)

soy sauce (low sodium preferred or tamari)

rice vinegar

Instructions
Slice zucchinis into half-moons, mince garlic, grate ginger, and slice green onions (5 minutes).
Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
Add ground turkey; cook until browned, about 5-6 minutes. Season with salt and pepper.
Stir in garlic and ginger; cook until fragrant, about 30 seconds. Add zucchini and cook 3 minutes.
Pour in soy sauce, rice vinegar, and honey; cook 2 minutes until sauce thickens. Garnish with green onions before serving.
Notes
Adjust seasoning to taste and serve hot.
