A quick and healthy stir-fry combining lean ground turkey and fresh zucchini, perfect for a nutritious weeknight dinner.

Ingredients

Protein

  • 1 pound lean ground turkey

Vegetables

  • 2 medium zucchinis zucchinis, sliced into half-moons

Oils & Condiments

  • 2 tablespoons olive oil or neutral oil like avocado oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (or pinch of ground ginger)
  • 3 tablespoons soy sauce (low sodium preferred or tamari)
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey (or maple syrup)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions sliced for garnish

Salt and pepper

Instructions 

  • Slice zucchinis into half-moons, mince garlic, grate ginger, and slice green onions (5 minutes).
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  • Add ground turkey; cook until browned, about 5-6 minutes. Season with salt and pepper.
  • Stir in garlic and ginger; cook until fragrant, about 30 seconds. Add zucchini and cook 3 minutes.
  • Pour in soy sauce, rice vinegar, and honey; cook 2 minutes until sauce thickens. Garnish with green onions before serving.

Notes

Adjust seasoning to taste and serve hot.
