These quick and easy gluten-free brownies are rich, fudgy, and perfect for satisfying your chocolate cravings!

  • 9 tablespoons chopped unsalted butter
  • 1.25 cups white sugar
  • 2 eggs room temperature
  • 1 teaspoon vanilla essence
  • 1 cup unsweetened cocoa powder (either natural or dutch-processed)
  • 1/3 cup all-purpose gluten-free flour mix (better batter used; see details for suitable blends)
  • 1/8 teaspoon xanthan gum (skip if your mix includes it)
  • 2 tablespoons cornstarch (substitute with more cup4cup if using as your gluten-free flour mix)
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 5 ounces semi-sweet chocolate chips

Instructions 

  • Preheat the oven to 350°F (175°C) and grease a baking pan.
  • Melt the butter and mix with sugar until well combined.
  • Add eggs and vanilla essence, mixing until smooth.
  • In a separate bowl, combine cocoa powder, gluten-free flour mix, xanthan gum, cornstarch, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, then fold in chocolate chips.
  • Pour the batter into the prepared pan and bake for 25 minutes.

Notes

For extra fudginess, do not overbake the brownies.
