Ingredients

Dry Ingredients

  • 2.5 cups all purpose flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 1 cup pumpkin puree (canned, unsweetened)
  • 0.5 cup unsalted butter (melted)
  • 2 large eggs
  • 0.25 cup milk
  • 4 ounces cream cheese (room temperature)
  • 0.33 cup powdered sugar (or icing sugar)
  • 1 teaspoon vanilla extract
  • 2.5 teaspoons pumpkin pie spice
  • 0.5 cup pecans (chopped)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin pan.
  • Mix dry ingredients in one bowl and wet ingredients in another, then combine.
  • Fill muffin cups halfway, add cream cheese mixture, then top with remaining batter.
  • Cover with pecan topping and sprinkle with cinnamon sugar.
  • Bake for about 35 minutes, then cool before serving.

Notes

For extra flavor, consider adding chocolate chips or dried cranberries to the batter.
