Streusel Topping

light brown sugar (packed)

Instructions
Preheat oven to 400°F (200°C). Prepare pie crust and blind bake if desired.
Mix crust ingredients, cut in butter until crumbly, press into pie pan, and bake for 10 minutes.
Combine filling ingredients, mix until smooth, pour into baked crust.
Bake pie at 400°F for 20 minutes, then prepare streusel topping.
Mix streusel ingredients until crumbly, chill until ready.
Remove pie, sprinkle streusel evenly over top, reduce oven to 350°F, and bake for 50-60 minutes. Cool before serving.
Notes
Chill the streusel topping before adding for best texture.
