Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger

Wet Ingredients

  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree ((not pumpkin pie filling))
  • 0.33 cup water
  • 1 teaspoon vanilla extract

Streusel Topping

  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 0.25 cup unsalted butter, cold and cubed

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a loaf pan.
  • Whisk together dry ingredients in a medium bowl.
  • Combine wet ingredients in a large bowl and whisk until smooth.
  • Gradually add dry mixture to wet mixture, stirring gently.
  • Prepare streusel topping and mix until crumbly.
  • Pour batter into pan, sprinkle streusel on top, and bake for 55-65 minutes.

Notes

Let the bread cool before slicing for best results.
