Ingredients

Wet Ingredients

  • 1 cup canned pumpkin purée
  • 2 large eggs (room temperature)
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup maple syrup
  • 1/4 cup neutral oil (like avocado or vegetable)
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a loaf pan.
  • Whisk together pumpkin, eggs, brown sugar, maple syrup, oil, and vanilla.
  • Combine dry ingredients in another bowl.
  • Fold dry ingredients into wet until just combined.
  • Pour into pan and bake for 55–65 minutes.
  • Cool in pan for 10 mins, then transfer to a wire rack.

Notes
