vanilla protein powder (whey or plant-based)

old-fashioned oats
Baking & Spices

milk of choice (almond, oat, or regular)
For Cooking

coconut oil or butter

Instructions
Mash bananas in a large bowl until smooth.
Add eggs and vanilla extract to bananas, whisk until combined.
Mix dry ingredients in a separate bowl. Fold into wet mixture, adding milk until batter is pourable. Rest for 2-3 minutes.
Heat a non-stick pan with coconut oil. Pour 1/4 cup batter per pancake, cook 2-3 minutes per side until golden.
Serve hot with your favorite toppings.
Notes
For fluffier pancakes, let the batter rest before cooking.
