Instructions
Heat oil in a pan and add mustard seeds, cumin seeds, and urad dal if using.
Add chopped garlic, curry leaves, broken red chili, and sauté until fragrant.
Add potatoes, turmeric, asafoetida, red chili powder, and salt. Cook until potatoes are tender and crispy.
Sprinkle garam masala or sambar powder, mix well, and cook for another 2 minutes.
