A simple and flavorful Indian-style potato fry, perfect as a side dish or snack.

Ingredients

Potatoes

  • 1.25 cup potatoes (½ inch cubes, 250 grams, 2-3 medium)
  • 1.5 tablespoon oil (adjust to taste)
  • 0.25 teaspoon mustard seeds (optional)
  • 0.5 teaspoon cumin seeds
  • 1 to 2 cloves garlic (chopped or crushed)
  • 0.125 teaspoon urad dal (optional)
  • 1 sprig curry leaves
  • 1 dried red chili red chili (broken, optional)
  • 0.125 teaspoon asafoetida (hing)
  • 0.125 teaspoon turmeric
  • 0.5 teaspoon red chili powder (adjust to taste)
  • 0.25 to 0.5 teaspoon garam masala or sambar powder
  • 0.33 teaspoon salt (as needed)

Instructions 

  • Heat oil in a pan and add mustard seeds, cumin seeds, and urad dal if using.
  • Add chopped garlic, curry leaves, broken red chili, and sauté until fragrant.
  • Add potatoes, turmeric, asafoetida, red chili powder, and salt. Cook until potatoes are tender and crispy.
  • Sprinkle garam masala or sambar powder, mix well, and cook for another 2 minutes.

Notes

Adjust spices to taste and serve hot.
