Ingredients

Cake and Dry Mixes

  • 1 box yellow cake mix
  • 3.4 oz vanilla instant pudding mix

Wet Ingredients

  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup water

Pineapple and Coconut

  • 8 oz crushed pineapple (drained; reserve juice)
  • 1 cup sweetened shredded coconut
  • 1 cup chopped nuts (optional; pecans or walnuts recommended)

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch pan.
  • Mix cake and pudding, then add eggs, oil, and water; blend until smooth.
  • Fold in pineapple, coconut, and nuts if using.
  • Pour batter into pan; bake 30-35 minutes until a toothpick comes out clean.
  • While warm, poke holes and drizzle pineapple juice over the cake.
  • Cool completely before slicing; serve as is or garnish.

Notes

For extra flavor, top with additional shredded coconut or powdered sugar.
