A luscious layered cake combining pineapple, coconut, and creamy vanilla pudding for a tropical treat.
Ingredients
Cake

yellow cake mix
as directed
water, oil, and eggs
(as directed on cake mix box)
Filling

can
crushed pineapple with juice
(20 oz can)

box
instant vanilla pudding
(3.4 oz box)

cold milk
Cream Layer

package cream cheese
(room temperature)

container whipped topping
(thawed)

shredded coconut
(sweetened or unsweetened)
Instructions
Prepare the cake according to package directions in a 13×9 pan and cool completely.
Mix vanilla pudding, milk, and cream cheese until smooth.
Poke holes in the cooled cake and spread half of the pudding mixture over it.
Spread pineapple with juice over the pudding layer, then add remaining pudding on top.
Top with whipped topping and toasted coconut, then refrigerate for at least 2 hours.
Notes
For extra flavor, toast the coconut until golden before topping the cake.
