A luscious layered cake combining pineapple, coconut, and creamy vanilla pudding for a tropical treat.

Ingredients

Cake

  • 1 box yellow cake mix
  • as directed water, oil, and eggs (as directed on cake mix box)

Filling

  • 1 can crushed pineapple with juice (20 oz can)
  • 1 box instant vanilla pudding (3.4 oz box)
  • 2 cups cold milk

Cream Layer

  • 1 8 oz package cream cheese (room temperature)
  • 1 8 oz container whipped topping (thawed)
  • 1.5 cups shredded coconut (sweetened or unsweetened)

Instructions 

  • Prepare the cake according to package directions in a 13×9 pan and cool completely.
  • Mix vanilla pudding, milk, and cream cheese until smooth.
  • Poke holes in the cooled cake and spread half of the pudding mixture over it.
  • Spread pineapple with juice over the pudding layer, then add remaining pudding on top.
  • Top with whipped topping and toasted coconut, then refrigerate for at least 2 hours.

Notes

For extra flavor, toast the coconut until golden before topping the cake.
