A flavorful and easy-to-make chicken fried rice recipe with a perfect balance of savory ingredients and fresh vegetables.

Ingredients

Oil

  • 2 tsp sesame oil
  • 1 tbsp neutral oil (avocado oil preferred) (for stir-frying)

Chicken

  • 0.75 lb chicken breasts (cut into 2-inch pieces)

Sauces and fats

  • 2.5 tbsp soy sauce
  • 1.5 tbsp butter (Kerrygold salted butter)
  • 2 tsp lemon juice
  • salt salt
  • pepper pepper
  • 1 clove garlic (minced)
  • 1 tsp ginger (grated)

Vegetables

  • 1/2 cup white onion (finely diced into 1/4-inch pieces)
  • 1 cup frozen vegetables (peas and carrots)

Eggs

  • 2 units eggs

Cooked Rice

  • 4 cups cold cooked rice (preferably day-old)
  • 3.5 tbsp soy sauce (Kikkoman Less Sodium)
  • 0.75 tsp sesame oil

Additional butter

  • 4 tbsp butter

Garnish

  • sesame seeds sesame seeds

Instructions 

  • Heat sesame oil and neutral oil in a wok or large skillet over medium-high heat.
  • Add chicken pieces, cook until browned and cooked through, then remove and set aside.
  • In the same pan, sauté garlic and ginger, then add diced onion and frozen vegetables; cook until tender.
  • Push vegetables to the side, scramble eggs in the pan, then add cooked rice, soy sauces, and butter; stir-fry until well combined and heated through.
  • Return cooked chicken to the pan, mix well, garnish with sesame seeds, and serve hot.

Notes

Use day-old rice for best texture and flavor.
