A delicious twist on classic French toast filled with creamy peanut butter and fresh bananas, perfect for a hearty breakfast or brunch.

Ingredients

Dairy & Eggs

  • 0.75 cup milk (almond, oat, or cow’s)
  • 2 large eggs
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon (based on your flavor preference)
  • 0.5 to 0.66 cup peanut butter (crunchy or creamy)
  • 2 bananas (sliced)
  • 10-12 slices your favorite bread (Texas toast or brioche)

Instructions 

  • Whisk milk, eggs, maple syrup, cinnamon, and vanilla in a shallow bowl.
  • Spread peanut butter on half of each bread slice; add a small amount on the other slice for bananas.
  • Place banana slices on the peanut buttered side, assemble sandwiches, and press lightly.
  • Dip sandwiches into the milk mixture just before cooking.
  • Cook sandwiches on a greased pan for 2-4 minutes per side until golden brown.
  • Serve topped with additional bananas, strawberries, whipped cream, or syrup as desired.

Notes

Use ripe bananas for best flavor and consider adding strawberries or whipped cream for extra indulgence.
