Orange Olive Oil Cake Recipe

A moist and flavorful citrus cake infused with orange zest and olive oil, perfect for a light dessert or snack.

Ingredients

Dry ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Wet ingredients

  • cups granulated sugar
  • 2 large oranges, zested (about 3 medium oranges)
  • 3 large eggs, room temperature
  • 1 cup olive oil
  • ½ cup orange juice, room temperature
  • ½ cup whole milk, room temperature
  • 2 tablespoons granulated sugar for topping (optional)

Instructions 

  • Preheat oven to 350°F (177°C). Grease a 9-inch pan and line with parchment.
  • Mix dry ingredients in a bowl. Whip sugar and orange zest until wet sand consistency. Add eggs and whip until thick, then stream in olive oil on low, increase to high for 1 min.
  • On low, add orange juice and milk, then dry ingredients. Pour batter into prepared pan.
  • Sprinkle sugar on top if desired. Bake for 40-45 minutes until golden and a toothpick comes out clean.
  • Cool in pan for 15-20 minutes, then remove sides and cool further. Serve topped with orange slices or powdered sugar.

Notes

Use fresh oranges for the best flavor. Be careful with hot sugar topping.
