A moist and flavorful cake combining the zest and juice of oranges with ground almonds, topped with sliced almonds and orange zest for a delightful treat.

Ingredients

Butter and Sugar

  • 200 g unsalted butter, softened (about 7 oz)
  • 200 g caster sugar, superfine (about 1 cup)

Eggs

  • 3 large large eggs

Almond and Flour

  • 100 g almond meal, ground almonds (about 1 cup)
  • 150 g self-raising flour (or all-purpose with baking powder)

Orange Zest and Juice

  • 2 large large zest of oranges
  • 30 ml juice of 1/2 orange

Flavorings and Toppings

  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon (optional)
  • 100 g powdered sugar, icing sugar (about 1 cup)
  • 1 to 2 tbsp orange juice (for the glaze)
  • a handful sliced almonds, flaked almonds (for topping)
  • Thick strips or grated orange zest for finishing

Instructions 

  • Preheat oven to 350°F (180°C). Grease and line a cake tin.
  • Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in orange zest, juice, vanilla, and cinnamon.
  • Fold in ground almonds and flour until just combined. Pour batter into prepared tin.
  • Bake for 45 minutes or until a skewer inserted comes out clean. Cool in tin.
  • Mix powdered sugar with orange juice to make glaze. Drizzle over cooled cake, top with sliced almonds and orange zest.

Notes

For a richer flavor, let the cake sit overnight before serving.
