Ingredients
Butter and Sugar
200gunsalted butter, softened(about 7 oz)
200gcaster sugar, superfine(about 1 cup)
Eggs
3largelarge eggs
Almond and Flour
100galmond meal, ground almonds(about 1 cup)
150gself-raising flour(or all-purpose with baking powder)
Orange Zest and Juice
2largelarge zest of oranges
30mljuice of 1/2 orange
Flavorings and Toppings
1tspvanilla extract
0.5tspground cinnamon (optional)
100gpowdered sugar, icing sugar(about 1 cup)
1 to 2tbsporange juice (for the glaze)
a handfulsliced almonds, flaked almonds (for topping)
Thick strips or grated orange zestfor finishing
Instructions
Preheat oven to 350°F (180°C). Grease and line a cake tin.
Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in orange zest, juice, vanilla, and cinnamon.
Fold in ground almonds and flour until just combined. Pour batter into prepared tin.
Bake for 45 minutes or until a skewer inserted comes out clean. Cool in tin.
Mix powdered sugar with orange juice to make glaze. Drizzle over cooled cake, top with sliced almonds and orange zest.
Notes
For a richer flavor, let the cake sit overnight before serving.
