A moist and flavorful cake combining the bright citrus flavor of oranges with the nutty richness of almonds, perfect for a special occasion or teatime treat.

  • 2 large oranges, preferably organic (whole oranges for boiling and pureeing)
  • 1 cup almond flour
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp baking powder
  • 1/2 tsp almond extract, optional
  • 1/4 cup sliced almonds, for topping
  • Powdered sugar for dusting Powdered sugar

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9-inch pan and line with parchment.
  • Boil oranges for 1.5 hours, drain, cool, then puree with peel.
  • Beat eggs and sugar until fluffy, then fold in orange puree, almond flour, baking powder, and almond extract.
  • Pour batter into pan, sprinkle sliced almonds on top, and bake for 45-50 minutes.
  • Cool in pan 10 minutes, then transfer to rack. Dust with powdered sugar before serving.

Notes

Using organic oranges enhances flavor and reduces pesticide exposure.
