Ingredients

Meat

  • 1 lb ground beef
  • 1 cup long-grain white rice

Beans and Tomatoes

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes with green chilies
  • ΒΌ cup honey

Spices and Broth

  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 cup beef broth
  • 1 tbsp olive oil

Instructions 

  • Heat olive oil in a skillet, cook beef until browned, about 5-7 minutes.
  • Stir in chili powder, smoked paprika, and cook for 1-2 minutes.
  • Add rice, beans, tomatoes, broth, and honey; mix well.
  • Bring to a boil, then simmer covered for 20 minutes until rice is tender.
  • Let sit for 5 minutes, then fluff and serve.

Notes

For extra flavor, garnish with fresh cilantro or a squeeze of lime.
