A quick and healthy one-pan meal combining turkey and fresh vegetables, perfect for a wholesome dinner.

Ingredients

Protein

  • 1 lbs turkey breast

Vegetables

  • 4 potatoes potatoes
  • 1 large large zucchini
  • 1 large large bell pepper
  • 2 small small onions (cut julienne)
  • 5 large large mushrooms
  • 2 green onions green onions
  • to taste vegetable oil to drizzle
  • to taste salt and pepper
  • 1 teaspoon mustard seeds or coriander
  • few sprigs fresh thyme

Instructions 

  • Preheat oven to 400°F (200°C). Line a sheet pan with baking paper.
  • Slice turkey and potatoes, add to the pan. Add sliced bell peppers, onions, zucchini, mushrooms, and green onions.
  • Drizzle with oil, season with salt, pepper, mustard seeds, and add thyme. Mix well.
  • Bake for 20-25 minutes until turkey is golden.
  • Serve with yogurt garlic sauce.

Notes

Ensure vegetables are evenly spread for uniform cooking.
