A quick and hearty one-pan dish combining ground meat, peppers, and rice for a satisfying meal.

Ingredients

Meat

  • 1 pound ground beef or turkey

Vegetables

  • 3 bell peppers bell peppers (mixed colors, diced)
  • 1 medium medium onion (diced)

Grains

  • 1 cup rice (white or brown)

Aromatics & Liquids

  • 3 cloves garlic (minced)
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup water or broth

Seasonings

  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Optional Toppings & Garnish

  • 0.5 cup shredded cheese for topping
  • fresh parsley or red chili flakes for garnish

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add ground meat and cook until browned.
  • Add diced onions, garlic, and diced peppers; cook until vegetables are tender.
  • Stir in rice, crushed tomatoes, water or broth, and seasonings; bring to a boil.
  • Reduce heat, cover, and simmer until rice is cooked and liquid is absorbed, about 15 minutes.
  • Optional: Sprinkle shredded cheese on top, garnish with parsley or chili flakes before serving.

Notes

For a vegetarian version, substitute the meat with beans or lentils.
