A delicious and aromatic one-pot dish featuring mushrooms and rice, perfect for a quick weeknight meal.

Ingredients

Rice

  • 1 cup long-grain white rice ((or basmati for added aroma))

Vegetables

  • 2 tablespoons olive oil ((extra virgin))
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups cremini or button mushrooms, sliced
  • 2 cups vegetable broth ((or chicken broth if preferred))
  • 1 teaspoon soy sauce ((optional, for added umami))
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • salt and pepper (to taste)

Garnish

  • chopped parsley (for garnish)

Instructions 

  • Rinse the rice under cold water until clear to remove excess starch.
  • Chop onion, mince garlic, and slice mushrooms.
  • Heat olive oil in a skillet, sauté onion until translucent, then add garlic and mushrooms.
  • Add thyme, paprika, salt, and pepper, then mix in the rinsed rice.
  • Pour in broth, bring to a boil, then simmer covered for 15-18 minutes.
  • Fluff rice with a fork, garnish with parsley, and serve.

Notes

For extra flavor, consider adding a splash of white wine while cooking.
