A quick and hearty one-pot meal combining ground turkey, pasta, and cheesy spices for a satisfying dinner.

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 small diced yellow bell pepper
  • 1 small diced yellow onion
  • 4 cloves garlic (minced)
  • 1 lb ground turkey
  • 12 oz rotini pasta
  • 1 14.5 oz can diced tomatoes
  • 4 ½ cup water
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 ½ tsp salt
  • 4 oz cheddar cheese (shredded)
  • ¼ cup plain Greek yogurt
  • 1 small bunch cilantro (minced)

Instructions 

  • Heat a large pot over medium heat, add oil, bell pepper, onion, garlic, and turkey. Cook until turkey is crumbly and vegetables are tender, about 6-8 minutes.
  • Add pasta, tomatoes, water, and spices. Bring to a boil, then simmer until pasta is cooked and water absorbed, about 15 minutes.
  • Remove from heat, stir in cheese, yogurt, and half of cilantro until creamy. Garnish with remaining cilantro.

Notes

For a spicier kick, add a dash of hot sauce or chili flakes.
