A hearty and comforting soup combining tender beef, mushrooms, and noodles in a creamy broth, all cooked in one pot for easy cleanup.

Ingredients

Dairy

  • 2 tablespoons unsalted butter
  • 1 pound beef sirloin (trimmed of fat, thinly sliced into bite-sized strips)

  • 8 ounces sliced crimini mushrooms
  • 1 medium sweet onion (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 5 cups low-sodium beef stock ((or chicken stock))
  • 1 1/2 cups dried egg noodles
  • 1/2 cup sour cream
  • 2 tablespoons all-purpose flour

Fresh herbs

  • to taste chopped fresh parsley

Instructions 

  • Sear the beef in butter until browned, then transfer to a bowl.
  • Sauté mushrooms, onion, and garlic until softened. Stir in tomato paste and Worcestershire sauce.
  • Pour in beef stock, bring to a boil, add noodles, and simmer until al dente. Mix sour cream and flour, then stir into the soup to thicken. Return beef to the pot and cook briefly.

Notes

Adjust seasoning as needed and serve hot garnished with parsley.
