A delicious and easy one-pan meal featuring tender chicken, flavorful rice, and a creamy Parmesan sauce, perfect for a quick dinner.

Ingredients

Protein

  • 1.5 pounds chicken breasts (cut into 1-inch cubes)
  • 4 tablespoons unsalted butter
  • 1 large onion (finely diced)
  • 3 cloves garlic (minced (approximately 3 teaspoons))
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2.5 cups chicken broth
  • 1 cup long-grain white rice
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Optional Garnish

  • to taste parsley (chopped, for garnish)

Instructions 

  • Preheat a large skillet over medium-high heat and melt the butter.
  • Sauté diced onion for 2-3 minutes until softened.
  • Add chicken, Italian seasoning, black pepper, and salt; cook for 5 minutes until golden.
  • Stir in minced garlic and cook for 1 minute.
  • Add broth and rice; bring to a boil, then simmer covered for 17-20 minutes until rice is tender.
  • Remove lid, stir in heavy cream and Parmesan until creamy. Garnish with parsley if desired.

Notes

Ensure not to overcook the garlic to prevent burning and bitterness.
