A quick and flavorful one-pan meal combining tender chicken, rice, and vegetables with a sweet and smoky BBQ glaze.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts

Grains

  • 1 cup long-grain rice

Broth & Sauces

  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey

Vegetables

  • 1 cup mixed vegetables (frozen or fresh)

Spices & Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • to taste N/A Salt and pepper

Instructions 

  • Season chicken and sear in a skillet for 5 minutes per side until browned.
  • Mix BBQ sauce and honey; pour over chicken.
  • Add rice and chicken broth; stir and bring to a simmer.
  • Cover and cook on low for 20 minutes until rice is tender.
  • In the last 5 minutes, add vegetables on top to steam.
  • Let sit for 5 minutes, then fluff rice and serve.
