A hearty and comforting vegetable beef soup packed with tender beef and fresh vegetables, perfect for a cozy meal.

stewing beef (chuck), cubed
(Pat dry and season with salt and pepper)

carrots, peeled and sliced

celery, sliced

garlic, crushed

tomato paste

can (400 g)
chopped tomatoes

Worcestershire sauce

potatoes, peeled and diced

green beans, trimmed and cut

sweetcorn, canned or frozen

Instructions
Brown the beef in batches, then set aside.
Sauté onions and celery, then add garlic and tomato paste, scraping browned bits.
Return beef to pot with tomatoes, stock, bay leaves, and thyme; simmer for 1¼ hours.
Add carrots and potatoes, cook 15 minutes; then add green beans and cook 8 minutes.
Stir in sweetcorn and peas, cook 5 minutes; season with salt, pepper, and sugar if needed.
Notes
Adjust seasoning to taste and serve hot with crusty bread.
