Rice and Water

sushi rice (short grain)

sushi-grade ahi tuna (or cured smoked salmon or canned tuna)
(Use well-drained canned tuna if applicable)

Additional Ingredients

(Remove seeds and membranes for less heat)

Instructions
Rinse rice until water runs clear, cook with water, then cool.
Mix vinegar, sugar, and salt; fold into rice and chill.
Press rice into a block, chill, then cut into rectangles.
Fry rice rectangles in hot oil until golden and crispy, then drain.
Mix mayonnaise, sriracha, soy, and lime to make spicy mayo.
Top crispy rice with avocado, spicy tuna, jalapeƱo, and sesame seeds. Serve immediately.

Ensure oil temperature is accurate for crispy rice.
