A flavorful and easy Moroccan-inspired chicken couscous bowl perfect for weeknights. Packed with spices, vegetables, and garnishes, it offers a complete and satisfying meal.

Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts or thighs (cut into 1-inch cubes)
  • 2 tbsp olive oil
  • 1 large yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 2 medium carrots (peeled and sliced)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1.5 tsp ground ginger
  • 1.5 tsp cinnamon
  • 0.5 tsp cayenne pepper (or to taste)
  • 1 tbsp tomato paste
  • 2 cups chicken broth
  • 1 can 15 oz chickpeas (rinsed and drained)
  • 0.5 cup dried apricots (halved)
  • to taste Salt and freshly ground black pepper
  • 1.5 cups couscous
  • 2 cups vegetable or chicken broth
  • 1 tbsp butter or olive oil
  • 0.25 cup fresh cilantro or parsley (chopped, for garnish)
  • 0.25 cup toasted slivered almonds (for garnish)

Instructions 

  • Mix spices, coat chicken, and brown in a skillet.
  • Sauté onion and garlic, add tomato paste, then simmer with broth, chicken, carrots, chickpeas, and apricots for 15-20 minutes.
  • Prepare couscous by boiling broth and butter, then stir in couscous, cover, and let sit for 5-7 minutes. Fluff with a fork.
  • Divide couscous into bowls, top with chicken mixture, garnish with herbs, almonds, and lemon wedges. Serve immediately.

Notes

Adjust spice levels to taste and serve with extra lemon for added brightness.
