A rich and moist vanilla pound cake that's perfect for any occasion.

Ingredients

Dry ingredients

  • 225 g all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt

Wet ingredients

  • 175 g softened butter
  • 150 g sugar
  • 150 ml milk
  • 2 large eggs lightly beaten eggs
  • 1.5 teaspoons vanilla extract

Instructions 

  • Preheat oven to 170°C (325°F). Grease and line a loaf tin.
  • Sift flour, baking powder, and salt. Cream butter and sugar until fluffy.
  • Add eggs gradually; if curdling, add a spoonful of flour. Mix in milk and flour alternately.
  • Pour batter into the tin and bake for 60-65 minutes until a skewer comes out clean.
  • Cool in the tin briefly, then transfer to a rack.

Notes

Ensure not to overmix the batter for a tender crumb.
