Ingredients

Eggs

  • 4 pieces eggs
  • 3/4 cup granulated sugar
  • 1/2 tsp vanilla extract
  • Orange zest orange zest (from 1 orange)
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 3 cups almond flour
  • 1/2 tsp baking powder
  • 1/3 cup sliced almonds

Confectioners' sugar

Instructions 

  • Preheat oven to 350℉/180℃. Grease a 9-inch round pan and line with parchment.
  • Whisk egg yolks with half the sugar until pale. Add vanilla, orange zest, juice, and oil; mix well.
  • Fold in almond flour and baking powder. Beat egg whites until stiff peaks form, gradually adding remaining sugar.
  • Gently fold egg whites into the yolk mixture in parts. Pour batter into pan, remove air bubbles with a skewer.
  • Sprinkle sliced almonds on top and bake for 30-35 minutes. Cool, then dust with confectioners' sugar if desired.

Notes

Ensure not to overmix the batter to keep the cake light and airy.
