Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet ingredients

  • 1 cup plain Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Mix dry ingredients: flour, baking powder, salt.
  • Whisk yogurt, sugar, eggs until smooth. Add lemon zest, juice, oil, vanilla; mix well.
  • Gradually combine dry ingredients into wet mixture. Pour into pan.
  • Bake for 45–50 minutes. Cool before serving. Optional: drizzle with lemon glaze.
