A delightful tart featuring a buttery crust, creamy custard, and fresh mixed berries, perfect for a summer dessert or special occasion.

Ingredients

Crust

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1–2 tablespoons cold water (add gradually)

Custard

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter

Topping

  • 1 1/2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 1 tablespoon apricot jam (optional, for glaze) (warm slightly before brushing)

Instructions 

  • Preheat oven to 375°F (190°C). Mix flour, powdered sugar, and salt; cut in butter until coarse. Add water gradually, press into tart pan, and bake 15-18 mins. Cool completely.
  • Heat milk until steaming. Whisk sugar, cornstarch, and egg yolks; temper with hot milk. Cook until thickened, then stir in vanilla and butter. Chill until cold.
  • Spread custard in cooled shell, top with berries, and brush with warmed jam if desired. Refrigerate at least 1 hour before serving.

Notes

Ensure the custard is fully cooled before assembling to prevent sogginess.
