These adorable mini veggie pizza bites are perfect for a quick snack or party appetizer, packed with colorful vegetables and melty cheese on a crispy crust.

Ingredients

Dough

  • 1 can Refrigerated Pizza Dough (13.8 oz, choose classic or thin crust)
  • 0.5 cup Pizza Sauce (store-bought or homemade)
  • 1.5 cups Shredded Mozzarella Cheese (low-moisture, part-skim)
  • 0.25 cup Finely Diced Red Bell Pepper (adds sweetness and color)
  • 0.25 cup Finely Diced Green Bell Pepper (vegetal flavor and color)
  • 0.25 cup Finely Diced Red Onion (mild sharpness)
  • 0.25 cup Sliced Black Olives (salty, briny kick)
  • 0.25 cup Sliced Mushrooms (optional, earthy depth)
  • 1 tablespoon Olive Oil (for brushing dough)
  • 1 teaspoon Italian Seasoning (dried herbs blend)
  • to taste Salt and Black Pepper (to enhance flavors)

Optional Toppings

  • to taste Grated Parmesan Cheese (for sprinkling)
  • optional Cornmeal (for dusting baking sheet)

Instructions 

  • Preheat oven to 400°F (200°C). Prepare baking sheet with parchment or lightly greased, dusted with cornmeal if desired.
  • Unroll and optionally thin the pizza dough. Cut out circles with a 2.5-3 inch diameter cutter, re-rolling scraps as needed.
  • Transfer dough circles to the baking sheet. Brush tops with olive oil, then add a small spoonful of sauce, seasonings, cheese, and vegetables.
  • Bake for 10-15 minutes until golden and bubbly. Cool slightly before serving.

Notes

Use a small cookie cutter for best results and avoid overloading toppings for even baking.
