Ingredients

Potatoes

  • 2 lbs potatoes, peeled and thinly sliced
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup chopped fresh chives for garnish (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch dish.
  • Mix melted butter, cream cheese, sour cream, milk, garlic, onion, salt, and pepper until smooth.
  • Add sliced potatoes and toss to coat. Stir in 1.5 cups of cheddar cheese.
  • Transfer to dish, cover with foil, and bake 45 minutes.
  • Remove foil, sprinkle remaining cheese, and bake uncovered 15-20 minutes until bubbly and golden.
  • Let stand 5-10 minutes, garnish with chives, then serve.

Notes

For extra flavor, add cooked bacon or a sprinkle of paprika before serving.
