Enjoy these flavorful vegan wraps filled with quinoa, black beans, and colorful vegetables, topped with BBQ sauce and optional guacamole or sour cream.

Ingredients

Grains

  • 1 cup quinoa, uncooked

Beans and Vegetables

  • 15 oz black beans
  • 7 oz corn
  • 1 unit onion, chopped
  • 1 unit chili, chopped, seeds removed (optional)
  • 1 unit red pepper, diced

Condiments and Extras

  • to taste BBQ sauce
  • 4 units wraps (gf)
  • to taste salt, pepper
  • optional guacamole, vegan sour creme

Instructions 

  • Cook the quinoa according to package instructions.
  • Chop onion, chili, and red pepper.
  • Sauté onion, chili, and red pepper in a pan with oil for 5 minutes.
  • Fill wraps with cooked quinoa, vegetables, corn, and black beans. Add guacamole, sour creme, and BBQ sauce if desired. Roll up and serve.
