0.5cupdiced bell pepper (optional)(can omit if desired)

1limelime for juice and zest

3tablespoonsneutral oil or 1 tablespoon oil

Instructions
If using plain cooked chicken, toss it with chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and a squeeze of lime. Warm in a skillet for 2-3 minutes.
Cook onion and bell pepper in a splash of oil over medium heat until lightly softened, about 3-4 minutes. Add jalapeños for 30 seconds, then remove to a bowl.
Combine chicken, sautéed veggies, cilantro, and lime zest. Adjust seasoning as needed.
Heat a skillet over medium to medium-low heat. Add oil and butter. Place a tortilla, sprinkle cheese, add chicken mixture, top with more cheese, then cover with second tortilla.
Cook for 2-3 minutes until golden and cheese melts, then flip and cook another 2-3 minutes until crisp. Rest for 1 minute, then cut into wedges.
Notes
For extra flavor, add corn kernels, black beans, chipotle in adobo, or salsa verde. Serve with salsa, guacamole, sour cream, and lime wedges.
