Ingredients
Cake Batter
220mlfull fat whole milk(room temperature)
1tbspwhite distilled vinegar
250gplain or all purpose flour
80gunsweetened cocoa powder
2tspbaking powder
2tspbaking soda
1.5tspsalt
240ggranulated sugar
150gdark brown sugar
3largeeggs(room temperature)
150mloil
1.5tspsvanilla extract
200mlhot coffee or hot water and instant coffee
Frosting
50gunsweetened cocoa powder
32gcornstarch
280ggranulated sugar for frosting
a pinchsalt for frosting
335mlcold milk for frosting
135gdark chocolate, chopped
55gcold unsalted butter
3/4tspvanilla extract for frosting
Instructions
Preheat oven to 180°C (350°F), grease and line 3 8-inch pans.
Mix milk and vinegar; whisk dry ingredients. Combine eggs, milk mixture, oil, vanilla; add to dry and mix. Incorporate hot coffee and divide batter into pans.
Bake for 25-30 minutes, cool completely. Make frosting by whisking cocoa, cornstarch, salt, and sugar; add milk and cook until thick. Melt chocolate, add butter and vanilla, then cool. Frost the cake layers and serve.
