A rich and creamy pasta dish featuring tender chicken, sun-dried tomatoes, and flavorful herbs, perfect for a romantic dinner.

Ingredients

Pasta

  • 1 cup Penne Pasta (or pasta of choice)

Chicken

  • 2 boneless chicken breast boneless chicken breast

Cooking Oil

  • 1 tbsp cooking oil

Butter

  • 1 tsp butter

Garlic

  • 3 cloves garlic, minced

Onion

  • 1/2 onion onion, minced

Sun-dried Tomatoes

  • 3 halves sun-dried tomatoes, chopped

Tomato Paste

  • 1 tbsp tomato paste

Heavy Cream

  • 1 cup heavy cream

Chicken Stock

  • 1 cup chicken stock

Parmesan Cheese

  • 1/4 cup parmesan cheese

Fresh Basil

  • fresh basil, for garnish

Spices

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions 

  • Mix all dry spices and rub half onto the chicken.
  • Cook chicken in oil until browned, then remove.
  • Cook pasta until al dente, then drain.
  • Sauté onions and garlic in butter, add sun-dried tomatoes and tomato paste, then stir fry.
  • Add heavy cream, chicken stock, and spices; bring to boil. Mix in pasta and parmesan, then add chicken back. Garnish with basil and serve.

Notes

For quicker cooking, fillet the chicken in half lengthwise.
