Instructions
Microwave the chard until wilted, then drain and squeeze out excess water.
Chop the chard finely in a food processor, then mix with parmesan, ricotta, flour, egg, and salt until just combined.
Heat oil in a pan and fry heaped tablespoons of the mixture for 2-3 minutes per side until golden.
Remove fritters and keep warm; repeat with remaining batter.
Melt butter in a pan, add sage leaves, and fry until crisp and browned, about 2-3 minutes.
Serve the fritters drizzled with sage butter.
