  • 1.5 lbs frozen or fresh French fries
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp chili powder
  • 0.5 tsp salt
  • 1 lb ground beef, 80/20 preferred
  • 0.5 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp tomato paste
  • 0.25 cup water
  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 0.25 tsp cayenne pepper
  • 0.25 tsp salt
  • 0.5 cup diced tomatoes
  • 0.25 cup sliced jalapeños, fresh or pickled
  • 0.25 cup chopped green onions
  • 0.25 cup sour cream
  • 0.25 cup chopped fresh cilantro

Instructions 

  • Preheat oven to 425°F (220°C). Toss fries with olive oil and spices, then bake for 25-30 minutes until crispy.
  • Cook ground beef with onion and garlic until browned. Add spices, tomato paste, and water; simmer until thickened.
  • Make cheese sauce by melting butter, whisking in flour, then gradually adding milk and cheese until smooth.
  • Arrange fries on a platter, top with beef, drizzle with cheese sauce, and garnish with tomatoes, jalapeños, green onions, sour cream, and cilantro.

Notes

For extra flavor, add your favorite hot sauce or extra jalapeños.
