Enjoy a delicious twist on classic nachos with tender BBQ chicken, fresh toppings, and melted cheese, perfect for sharing.

Ingredients

Chicken and Sauce

  • 2.5 cups cooked shredded chicken (about 2 chicken breasts)
  • 0.75 cup BBQ sauce (favorite variety)

Toppings

  • 13 oz tortilla chips
  • 2 pcs Roma tomatoes (diced small)
  • 15 oz black beans (drained and rinsed)
  • 1 cup frozen corn (thawed)
  • 1/3 cup finely chopped red onion
  • 1 pcs jalapeño (seeds removed and diced small)
  • 2.5 cups shredded Mexican Style cheese

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with foil and spray with cooking spray.
  • Mix shredded chicken with BBQ sauce. Spread 2/3 of chips on the prepared sheet.
  • Layer with 2/3 of the chicken, tomatoes, black beans, corn, red onion, jalapeño, and cheese. Repeat with remaining chips and toppings, finishing with cheese and jalapeños.
  • Bake for 7-10 minutes until cheese melts. Serve hot.

Notes

For extra spice, add more jalapeños or hot sauce.
