Ingredients

Tortilla Shells

  • 12 pieces small flour or corn tortillas (6-inch size)

Ground Beef

  • 1 lb ground beef

Seasoning Mix

  • 1 packet taco seasoning mix (or homemade)
  • 3/4 cup water

Cheddar Cheese

  • 1 cup shredded cheddar cheese

Diced Tomatoes

  • 1/2 cup diced tomatoes

Fresh Cilantro

  • 1/4 cup chopped fresh cilantro

Sour Cream

  • Sour cream (for topping)

Cooking Spray or Oil

  • cooking spray or oil (for greasing the muffin tin)

Instructions 

  • Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  • Cut tortillas into smaller circles or squares, press into muffin cups, and bake for 8-10 minutes until crispy.
  • Cook ground beef in a skillet until browned, drain excess fat, add seasoning and water, simmer until thickened.
  • Fill tortilla cups with beef, top with cheese, and bake 5-7 minutes until cheese melts.
  • Cool slightly, then top with sour cream, diced tomatoes, and cilantro before serving.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
