A healthy and flavorful casserole combining wild rice, turkey, vegetables, and cheese for a comforting meal.

Ingredients

Grains

  • 1 cup wild rice blend

Protein

  • 3 cups cooked turkey (cubed or shredded)

Vegetables

  • 1 yellow onion yellow onion (diced)
  • 8 baby bella or cremini mushrooms diced mushrooms

Oils & Condiments

  • 2 tablespoons olive oil

Garlic & Herbs

  • 3 cloves garlic (minced)
  • 1/2 teaspoon dried thyme

Broth & Thickener

  • 3/4 cup turkey or chicken broth
  • 1 tablespoon arrowroot powder (mixed with water)

Frozen Peas

  • 10 ounces frozen peas

Cheese (optional)

  • 1/2 cup sharp cheddar (or other cheese) ((optional))

Instructions 

  • Cook the wild rice as per package instructions.
  • Preheat oven to 350F/175C. Saute onions and mushrooms in oil for 4-5 minutes.
  • Add garlic, thyme, salt, and pepper; cook for 1 minute. Stir in broth and thicken with slurry.
  • Combine cooked rice, turkey, peas, cheese, and sauce in a casserole dish. Bake covered for 15 minutes.

Notes

You can top with extra cheese in the last 5 minutes for added flavor.
