A moist and tangy lemon loaf with crunchy poppy seeds, perfect for a delightful treat or brunch.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons poppy seeds

Wet ingredients

  • 1 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 0.5 cup whole milk (at room temperature)
  • 0.5 cup unsalted butter (melted and cooled)
  • 0.25 cup fresh lemon juice (from 2 lemons)
  • 2 tablespoons lemon zest (from 2 lemons)
  • 1 teaspoon vanilla extract

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment.
  • Mix dry ingredients and poppy seeds in a bowl. Whisk sugar and eggs until thick, then add milk, butter, lemon juice, zest, and vanilla.
  • Combine wet and dry mixtures until just combined. Pour into pan and bake for 45-55 minutes.
  • Cool in pan for 10 minutes, then transfer to a wire rack. Mix powdered sugar with lemon juice to make glaze, then drizzle over cooled loaf.

Notes

Ensure not to overmix the batter for a tender crumb.
