Ingredients

butter

  • 7 tablespoons unsalted butter (softened to room temperature)

sugar

  • 3/4 cup light or dark brown sugar (packed)

vanilla extract

  • 1 teaspoon vanilla extract

flour

  • 1 cup all-purpose flour (spooned leveled)

baking powder

  • 1 teaspoon baking powder

salt

  • 1/4 teaspoon salt

oats

  • 1 cup old-fashioned oats or quick oats (not instant)

Instructions 

  • Preheat oven to 350°F (175°C). Cream butter and brown sugar until light and fluffy.
  • Mix in vanilla extract until evenly combined. Whisk together flour, baking powder, and salt.
  • Gradually add dry mixture to wet ingredients, mixing until just combined. Fold in oats.
  • Press dough into an 8x8 inch pan lined with parchment paper. Bake for 20-25 minutes until golden.
  • Cool completely on a wire rack before slicing into bars.
