Ingredients

  • 4 fillets white fish fillets (cod, tilapia, halibut) (about 6 oz each)
  • 1/4 cup unsalted butter or olive oil (melted)
  • 1 large lemon (sliced into thin rounds, plus extra for juicing)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon black pepper, freshly cracked
  • 1/2 teaspoon red pepper flakes (optional) (for a kick)
  • 1/2 teaspoon salt

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix melted butter, lemon juice, parsley, thyme, pepper, red pepper flakes, and salt.
  • Arrange fish in a baking dish and pour the mixture over.
  • Top with lemon slices and bake for 12-15 minutes until flaky.
