Bright and tangy lemon bars with a buttery crumb topping, perfect for a sweet treat or dessert.

Ingredients

Dough and Crumble

  • 1 ½ cups all-purpose flour
  • cup granulated sugar
  • ¼ tsp salt
  • ¾ cup cold unsalted butter, cubed
  • 1 tsp vanilla extract

Lemon Filling

  • 2 large eggs
  • ¾ cup granulated sugar
  • 2 tbsp all-purpose flour
  • 2 tbsp lemon zest (about 2 lemons)
  • cup fresh lemon juice

Pinch of salt

  • 1 pinch salt

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
  • Mix flour, sugar, salt; cut in butter until coarse. Stir in vanilla.
  • Press two-thirds of mixture into pan for crust; reserve rest for topping.
  • Bake crust 15 minutes until golden. Cool slightly.
  • Whisk eggs and sugar; add flour, lemon zest, juice, and salt. Mix well.
  • Pour lemon filling over crust; sprinkle with reserved crumble.
  • Bake 20-23 minutes until set and golden. Cool before slicing.

Notes

Chill the bars for at least 1 hour before slicing for best results.
