Bright and tangy lemon bars with a buttery crumb topping, perfect for a sweet treat or dessert.
Ingredients
Dough and Crumble

all-purpose flour

granulated sugar

Lemon Filling

all-purpose flour

lemon zest (about 2 lemons)

fresh lemon juice

Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
Mix flour, sugar, salt; cut in butter until coarse. Stir in vanilla.
Press two-thirds of mixture into pan for crust; reserve rest for topping.
Bake crust 15 minutes until golden. Cool slightly.
Whisk eggs and sugar; add flour, lemon zest, juice, and salt. Mix well.
Pour lemon filling over crust; sprinkle with reserved crumble.
Bake 20-23 minutes until set and golden. Cool before slicing.
Notes
Chill the bars for at least 1 hour before slicing for best results.
