Ingredients

Dry ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet ingredients

  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 2 tbsp lemon juice
  • Zest of 1 lemon lemon zest

Additional ingredients

  • 1 cup fresh or frozen blueberries
  • 1 cup powdered sugar
  • 2 tbsp lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Cream butter and sugar, add eggs, then mix in milk, lemon juice, and zest.
  • Whisk dry ingredients, fold into wet, then gently fold in blueberries.
  • Pour batter into pan, bake for 50–60 minutes, cool, then drizzle with lemon glaze.

Notes

Use fresh blueberries for best flavor, and store in an airtight container.
