A flavorful Lebanese dish combining tender squash with spiced ground beef, perfect served plain or over rice.

Ingredients

Vegetables and Meat

  • 1 tbsp olive oil
  • 1 diced onion
  • 3 minced garlic cloves
  • 1 lb ground beef ((0.5 kg))
  • 1 heaped tsp seven spices, all spice, or mixed spice
  • 1/2 tsp cinnamon powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 lbs summer squash (koosa or baby marrow), or zucchini (diced into 1/2 inch pieces (1 kg))
  • 2-2.5 cups water
  • 5 oz g tomato paste ((135 g))

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Add diced onions and cook for 3-4 minutes until softened.
  • Add minced garlic and cook for 1 minute, then add ground beef. Cook for 6-8 minutes until browned, breaking apart clumps.
  • Stir in spices, salt, and black pepper. Add squash and water; stir to combine.
  • Add tomato paste, bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes until squash is tender.

Notes

You can serve this dish plain or over vermicelli rice for a complete meal.
