Instructions
Mix beef, rice, onions, tomatoes, oil, spices, salt, tomato paste, and citric acid. Chill or set aside.
Wash and prepare squash by removing stems and inner flesh with a corer.
Fill squash with mixture, then stack in a pot. Add tomato paste, spices, salt, bouillon, and water.
Bring to boil, then simmer covered for 60 minutes until broth thickens.
Cool slightly, then serve topped with tomato broth.
Notes
Ensure squash are not facing down during cooking for even filling.
